Spaghetti Bolognese Recipe

Spaghetti Bolognese the Vegetarian Way

We all know how much spaghetti Bolognese became an international cuisine that almost everybody is craving for. Kids of all ages fell in love with this meal that we often find it to be a part of a family’s diet. If you are wondering how you can make spaghetti Bolognese healthier for your family then cooking it the vegetarian way is the way to go. Kids won’t even notice that what they are eating are vegetables. It is also ideal for all the vegans out there who would want a decent quick fix meal on the table.

Here is what you will need:

A small onion or about 70 g that is finely diced
A small leek that is chopped
2 cloves of garlic that is crushed and roughly chopped
A diced small yellow pepper or Capsicum
A diced small green pepper or Capsicum
A diced sweet red and pointed pepper
A piece of bay leaf
A teaspoon of paprika
One tin of cherry tomatoes
A pinch of salt and pepper to taste
A pinch of dried basil and dried parsley
Half a cup of flavored soya mince
Olive oil
A cup of hot water
¼ cup of water
Cooked spaghetti noodles

What you will need to do:

  1. Put some olive oil in your pan and heat it. Once heated you can now fry your onions for a couple of minutes then you can add your leeks while stirring well you can add your garlic. Make sure that the stove is in medium heat before you can add your green, yellow and red peppers or capsicums.
  2. Add your paprika in the mix of peppers and stir well. You may want to put in the bay leaf and the tin of cherry tomatoes while stirring well. Let is simmer for a couple of minutes.
    At this point you can now place in your dried herbs together with the ¼ cup of water that was set aside. Stir well and don’t forget to put on the lid and let it simmer.
  3. In a separate bowl, place your dried soya mince and pour in the cup of hot water. Drizzle with a small amount of olive oil. Give it a few minutes for the water to soak and stir well. You can now drain of the excess water.
  4. Carefully add the tomato puree into the pan of the vegan Bolognese sauce while stirring well as you also add the soya mince.
  5. Let it simmer for a couple of minutes. Add salt and pepper to taste.
    You can now serve the vegetarian spaghetti Bolognese on top of the cooked spaghetti that was set aside or you can also top it off on bread or a much healthier baked potatoes.
  6. Lastly, enjoy the delicious and sumptuous spaghetti Bolognese cooked in a healthy vegetarian way. Serve with a smile and this will sure be a hit in on the dinner table.
